- 4 chicken breasts
- 1/4 cup lemon juice
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 red onion, diced
- 1/2 cup feta cheese, crumbled
- 2 cups cooked quinoa or rice
Instructions
- Marinate the chicken breasts in a mixture of lemon juice, olive oil, minced garlic, dill, salt, and pepper for at least 30 minutes.
- Preheat the grill or grill pan over medium-high heat. Grill the marinated chicken for 6-8 minutes on each side until fully cooked.
- Chop cucumbers, tomatoes, and red onions into bite-sized pieces and set aside.
- In a small bowl, whisk together olive oil, lemon juice, and dill for the dressing.
- Let the grilled chicken rest before slicing into strips.
- Assemble the bowls by starting with quinoa or rice, adding fresh veggies, sliced chicken, crumbled feta, and drizzling the lemon-dill dressing on top.
