Ingredients

  • 1/4 cup lemon juice
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 2 cups cooked quinoa or rice

Instructions

  1. Marinate the chicken breasts in a mixture of lemon juice, olive oil, minced garlic, dill, salt, and pepper for at least 30 minutes.
  2. Preheat the grill or grill pan over medium-high heat. Grill the marinated chicken for 6-8 minutes on each side until fully cooked.
  3. Chop cucumbers, tomatoes, and red onions into bite-sized pieces and set aside.
