  • 45 cloves garlic, minced
  • 4 tablespoons butter, melted
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with aluminum foil.
  2. Pat the beef tenderloin dry and rub with olive oil, seasoning generously with salt, pepper, and garlic powder.
  3. In a skillet, heat 1 tablespoon olive oil over medium-high heat and sear the beef for 2-3 minutes per side until golden brown.
  4. Mix melted butter, minced garlic, rosemary, and thyme in a bowl.
  5. Brush Dijon mustard over the tenderloin and coat with the herb butter mixture.
  6. Roast in the oven for 20-25 minutes until internal temperature reaches 130°F (54°C) for medium-rare.
  7. Remove from the oven, cover loosely with foil, and let rest for 10-15 minutes.
  8. Slice into 1-inch thick slices and serve with pan juices.
