- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon peppermint extract
- Green food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch pan.
- In a medium saucepan, melt the butter over low heat.
- Stir in the granulated sugar until well combined, then add the eggs one at a time, mixing thoroughly after each addition. Mix in the vanilla extract.
- Sift in the cocoa powder, flour, salt, and baking powder. Stir until just combined.
- Spread half of the brownie batter into the prepared pan.
- In a separate bowl, beat the cream cheese until smooth. Add powdered sugar, peppermint extract, and green food coloring. Mix until fluffy.
- Spread the mint cream cheese mixture over the brownie batter.
- Drop spoonfuls of the remaining brownie batter on top. Swirl the two mixtures with a knife.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before cutting into squares.
