- 8 oz spaghetti
- 2 cups cooked chicken, shredded
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup chicken broth
- 1 cup diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- Salt and pepper to taste
- Optional: parsley for garnish
Instructions
- Cook the spaghetti in a large pot according to the package instructions. Once done, drain and set aside.
- In a large skillet, add a drizzle of olive oil over medium heat. Add diced bell pepper and onion, sauté until softened, about 5 minutes.
- Add shredded chicken, cream of mushroom soup, chicken broth, and diced tomatoes to the skillet. Season with salt and pepper. Stir and let simmer.
- Fold cooked spaghetti into the skillet, ensuring it’s well coated with the sauce.
- Top with shredded cheddar cheese, cover, and reduce heat to low until melted.
- Serve in bowls and garnish with parsley if desired.
