Ingredients

  • 8 oz spaghetti
  • 2 cups cooked chicken, shredded
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • Salt and pepper to taste
  • Optional: parsley for garnish

Instructions

  1. Cook the spaghetti in a large pot according to the package instructions. Once done, drain and set aside.
  2. In a large skillet, add a drizzle of olive oil over medium heat. Add diced bell pepper and onion, sauté until softened, about 5 minutes.
  3. Add shredded chicken, cream of mushroom soup, chicken broth, and diced tomatoes to the skillet. Season with salt and pepper. Stir and let simmer.
  4. Fold cooked spaghetti into the skillet, ensuring it’s well coated with the sauce.
  5. Top with shredded cheddar cheese, cover, and reduce heat to low until melted.
