- 1 pound chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, combine the long-grain rice with the chicken broth, spreading it evenly.
- Add in the chopped onion and minced garlic, stirring gently.
- Toss in the frozen peas.
- Sprinkle paprika, salt, and pepper over the mixture.
- Drizzle olive oil over everything.
- Place the chicken on top of the rice mixture.
- Cover tightly with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the chicken is golden and cooked through.
- Let sit for 5 minutes before serving.
Notes
For fluffy rice, soak it in water for 30 minutes before baking. Adjust chicken pieces for even cooking.
