Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine the long-grain rice with the chicken broth, spreading it evenly.
  3. Add in the chopped onion and minced garlic, stirring gently.
  4. Toss in the frozen peas.
  5. Sprinkle paprika, salt, and pepper over the mixture.
  6. Drizzle olive oil over everything.
  7. Place the chicken on top of the rice mixture.
  8. Cover tightly with aluminum foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15-20 minutes until the chicken is golden and cooked through.
  10. Let sit for 5 minutes before serving.

Notes

For fluffy rice, soak it in water for 30 minutes before baking. Adjust chicken pieces for even cooking.
