One-Pan Creamy Parmesan Chicken and Rice

Description

A cozy and comforting dish featuring tender chicken and creamy rice, infused with the richness of Parmesan, perfect for busy weeknights or laid-back weekends.


Ingredients

  • 2 chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large skillet, drizzle 1 tablespoon of olive oil and heat it over medium heat until hot and shimmering.
  2. Season both sides of the chicken breasts generously with salt and pepper. Once the skillet is ready, carefully add the chicken and cook for 6-7 minutes on each side, or until browned and cooked through.
  3. Remove the chicken from the skillet and set it aside while preparing the rice mixture.
  4. In the same skillet, lower the heat slightly and add the minced garlic. Sauté for about 1 minute until fragrant and golden.
  5. Add the rice to the skillet and stir well, ensuring each grain is coated with the garlicky oil. Pour in the chicken broth and heavy cream, mixing everything together.
  6. Bring the mixture to a gentle simmer. Once simmering, return the chicken to the skillet, nestling it amid the rice.
  7. Cover the skillet and cook for around 20 minutes until the rice is tender and fluffy.
  8. Uncover the skillet and check that the rice is tender and all the liquid has been absorbed. Stir in the grated Parmesan cheese until melted and creamy.
  9. Top with chopped parsley before serving.

Notes

If using brown rice, adjust cooking time to allow for additional 10-15 minutes. Store leftovers in an airtight container in the fridge for up to 3 days.
