- 2 chicken breasts
- 1 cup rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large skillet, drizzle 1 tablespoon of olive oil and heat it over medium heat until hot and shimmering.
- Season both sides of the chicken breasts generously with salt and pepper. Once the skillet is ready, carefully add the chicken and cook for 6-7 minutes on each side, or until browned and cooked through.
- Remove the chicken from the skillet and set it aside while preparing the rice mixture.
- In the same skillet, lower the heat slightly and add the minced garlic. Sauté for about 1 minute until fragrant and golden.
- Add the rice to the skillet and stir well, ensuring each grain is coated with the garlicky oil. Pour in the chicken broth and heavy cream, mixing everything together.
- Bring the mixture to a gentle simmer. Once simmering, return the chicken to the skillet, nestling it amid the rice.
- Cover the skillet and cook for around 20 minutes until the rice is tender and fluffy.
- Uncover the skillet and check that the rice is tender and all the liquid has been absorbed. Stir in the grated Parmesan cheese until melted and creamy.
- Top with chopped parsley before serving.
Notes
If using brown rice, adjust cooking time to allow for additional 10-15 minutes. Store leftovers in an airtight container in the fridge for up to 3 days.
