- 4 chicken breasts
- 1 cup balsamic vinegar
- 2 cups cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat the olive oil over medium heat until it shimmers.
- Season the chicken breasts liberally with salt and pepper. Carefully place them in the hot skillet, cooking for 4-5 minutes on each side until golden brown.
- Pour the balsamic vinegar over the chicken.
- Add the halved cherry tomatoes over the chicken.
- Sprinkle the shredded mozzarella on top of the chicken and tomatoes.
- Transfer the skillet to the oven and bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F.
- Remove from the oven and garnish with fresh, chopped basil before serving.
