A comforting and flavorful dish combining juicy chicken with tangy balsamic sauce and vibrant cherry tomatoes.


Ingredients

  • 4 chicken breasts
  • 1 cup balsamic vinegar
  • 2 cups cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat until it shimmers.
  3. Season the chicken breasts liberally with salt and pepper. Carefully place them in the hot skillet, cooking for 4-5 minutes on each side until golden brown.
  4. Pour the balsamic vinegar over the chicken.
  5. Add the halved cherry tomatoes over the chicken.
  6. Sprinkle the shredded mozzarella on top of the chicken and tomatoes.
  7. Transfer the skillet to the oven and bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F.
  8. Remove from the oven and garnish with fresh, chopped basil before serving.
