Ingredients
Here’s everything you’ll need to bring this creamy, spicy, cheesy dream to life:
- 1.5 lbs sirloin steak, cut into bite-sized pieces
- 12 oz rotini or penne pasta
- 1 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic, minced
- ¾ cup buffalo wing sauce (mild or hot)
- ¼ cup honey
- 1.5 cups heavy cream
- 1 cup shredded cheddar cheese
- ½ cup mozzarella cheese
- Salt and black pepper, to taste
- 2 green onions, chopped (for garnish)
- Optional: ranch drizzle or crumbles of blue cheese for topping
Instructions
Step 1 – Sear the Steak: Heat olive oil in a large skillet over medium-high heat. Season the steak with salt and pepper, then sear it for 3–4 minutes until browned. Don’t crowd the pan; work in batches if needed. Set the steak aside once it’s cooked.
Step 2 – Start the Sauce: Lower the heat and melt the butter in the same pan. Add garlic and cook for about 1 minute until fragrant.
Step 3 – Make the Buffalo Cream Sauce: Stir in the buffalo sauce and honey. Let it bubble slightly, then slowly add the heavy cream. Mix until smooth and bring to a light simmer.
Step 4 – Add Pasta: Pour in the uncooked pasta and stir to coat. Cover and let it simmer for 10–12 minutes, stirring now and then. If the sauce gets too thick, add a splash of water.
Step 5 – Stir in Cheese. Lower the heat. Add the cheddar and mozzarella, stirring until melted and creamy. Adjust salt and pepper if needed.
