- 1 lb ground turkey
- 1 cup orzo pasta
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 cup spinach, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Warm the pot by placing a large, heavy-bottomed pot over medium heat and adding a drizzle of olive oil.
- Add the chopped onion and minced garlic to the pot and sauté for 3 to 5 minutes until translucent.
- Add the ground turkey and brown for 5 to 7 minutes, breaking it into small pieces.
- Pour in the diced tomatoes, chicken broth, and orzo; stir in Italian seasoning.
- Increase heat to a gentle boil, then reduce to simmer. Cover and cook for about 10 minutes until orzo is tender.
- Stir in the chopped spinach and let it wilt for about 1-2 minutes.
- Taste and season with salt and pepper, then serve warm.
