- 2 cups whole milk
- 1 1/2 cups water or broth
- 8 oz pasta of choice
- 8–10 oz broccoli, finely chopped
- 2 cups shredded extra sharp cheddar cheese
- 1/4 cup plain Greek-style yogurt
- 1 tbsp butter or ghee (optional)
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- A pinch of garlic powder or 1 small clove minced, to taste
- 1 teaspoon olive oil, to taste
- 1 tablespoon finely chopped shallot or 1 teaspoon onion powder (optional)
Instructions
- Pour the whole milk and water (or broth) into a large pot and heat over medium-high until gently boiling.
- Add the pasta, stir, reduce heat, and simmer for about 10 minutes until al dente, stirring occasionally.
- Stir in the finely chopped broccoli and cook for an additional 2-3 minutes until tender but crisp.
- Remove from heat and stir in shredded cheddar cheese, Greek yogurt, and butter until well combined and creamy.
- Serve warm, garnished with extra cheese or pepper, if desired.
Notes
For extra flavor, try swapping half the cheddar for smoked cheddar or adding protein like shredded chicken. Store leftovers in an airtight container for up to 3 days.
