  • 1 1/2 cups water or broth
  • 8 oz pasta of choice
  • 810 oz broccoli, finely chopped
  • 2 cups shredded extra sharp cheddar cheese
  • 1/4 cup plain Greek-style yogurt
  • 1 tbsp butter or ghee (optional)
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • A pinch of garlic powder or 1 small clove, minced (optional)
  • 1 teaspoon olive oil (optional)
  • 1 tbsp finely chopped shallot or 1 teaspoon onion powder (optional)

Instructions

  1. Pour the whole milk and water (or broth) into a large pot and heat over medium-high until gently boiling, stirring occasionally.
  2. Add the pasta and reduce heat, allowing it to simmer for about 10 minutes until al dente.
  3. Stir in the finely chopped broccoli and cook for an additional 2-3 minutes until tender but crisp.
  4. Remove from heat and stir in shredded cheddar cheese, Greek yogurt, and butter until well combined and creamy.
  5. Serve warm, garnished with extra cheese or pepper if desired.
