- 4 chicken breasts
- 1 cup grated Parmesan cheese
- 2 cups small potatoes, halved
- 2 cups green beans
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- Salt and pepper to taste
- Optional: Italian seasoning or herbs
- 1 tablespoon butter for extra richness, optional
- A squeeze of lemon for brightness, optional
- Extra olive oil for drizzling if needed
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the potatoes, halving and tossing with olive oil, garlic, salt, and pepper on a sheet pan.
- Add green beans and toss with the potatoes.
- Pat the chicken breasts dry and arrange them on the pan.
- Generously sprinkle the grated Parmesan over the chicken.
- Roast in the oven for 25-30 minutes until the chicken is golden and reaches an internal temperature of 165°F.
- Let the chicken rest for a few minutes before serving.
Notes
Great served family-style right from the sheet pan. Offer lemon wedges for added brightness.
