Ingredients

  • 4 chicken breasts
  • 1 cup grated Parmesan cheese
  • 2 cups small potatoes, halved
  • 2 cups green beans
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: Italian seasoning or herbs
  • 1 tablespoon butter for extra richness, optional
  • A squeeze of lemon for brightness, optional
  • Extra olive oil for drizzling if needed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes, halving and tossing with olive oil, garlic, salt, and pepper on a sheet pan.
  3. Add green beans and toss with the potatoes.
  4. Pat the chicken breasts dry and arrange them on the pan.
  5. Generously sprinkle the grated Parmesan over the chicken.
  6. Roast in the oven for 25-30 minutes until the chicken is golden and reaches an internal temperature of 165°F.
  7. Let the chicken rest for a few minutes before serving.

Notes
