Scale
  • 1 cup unsalted butter (or vegan butter)
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup chopped pecans

  3. Add flour, salt, and vanilla extract, mixing gently until just combined.
  4. Fold in the chopped pecans evenly throughout the dough.
  5. Form the dough into small balls using a tablespoon and place them on the baking sheet, spacing them apart.
  6. Mix corn syrup and plant-based milk together, spooning a small amount onto each cookie dough ball.
  7. Bake in the preheated oven for 10-12 minutes until pale golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For variations, try adding chocolate chips or spices like cinnamon. Substitute pecans with other nuts for different flavors.
