Delicious bites of creamy Brie cheese coated in a crunchy pistachio crust, drizzled with a sweet raspberry honey glaze.
Ingredients

- 1 wheel Brie cheese (8 oz / 225 g), cut into 1-inch cubes
- 1/2 cup crushed pistachios (60 g)
- 1 tbsp olive oil (15 ml)
- 12–16 mini phyllo cups or crackers
- Raspberry honey glaze (ingredients vary)
- Pinch of fine sea salt (optional, to taste)
- Freshly ground black pepper (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the crushed pistachios and olive oil to create a paste.
- Take each cube of Brie cheese and coat it with the pistachio mixture.
- Place the coated Brie bites into the mini phyllo cups or onto the crackers.
- Bake in the preheated oven for about 10-12 minutes, until the cheese is melted and the pistachios are golden.
- Drizzle raspberry honey glaze over the warm Brie bites before serving.
Notes
Keep the Brie chilled until ready to cut for neat cubes. Use parchment paper for easy cleanup.
