- 4 cups vegetable broth

- 2 tablespoons butter

Instructions
- Melt the butter in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onions are translucent.
- Add the diced potatoes and vegetable broth, bringing to a gentle boil. Reduce heat and simmer for about 15 minutes.
- Stir in the broccoli florets and cook for an additional 5 minutes.
- Puree the soup with an immersion blender until creamy and smooth.
- Stir in the milk and shredded cheddar cheese until melted. Season with salt and pepper to taste. Serve warm.
