  • 1 cup pumpkin pie filling
  • 1/4 teaspoon ground ginger

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, powdered sugar, and granulated sugar until smooth.
  3. Add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the butter mixture until just combined.
  6. Roll the dough into balls, about one inch in diameter, and flatten them slightly.
  7. Place half of the flattened cookies on a baking sheet lined with parchment paper.
  8. Add a small dollop of pumpkin pie filling in the center of each cookie.
  9. Top with another flattened cookie, sealing the edges gently.
  10. Bake for 12-15 minutes or until golden brown.
