- 1 cup pumpkin pie filling

Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, powdered sugar, and granulated sugar until smooth.
- Add the vanilla extract and mix until combined.
- In a separate bowl, whisk together the flour, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the butter mixture until just combined.
- Roll the dough into balls, about one inch in diameter, and flatten them slightly.
- Place half of the flattened cookies on a baking sheet lined with parchment paper.
- Add a small dollop of pumpkin pie filling in the center of each cookie.
- Top with another flattened cookie, sealing the edges gently.
