- 1 package of puff pastry sheets
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- Additional powdered sugar for dusting
Instructions
- Preheat oven to 400°F (200°C).
- Roll out puff pastry sheets to 1/8 inch thick on a floured surface.
- Cut rolled pastry into rectangular shapes, roughly 3 inches by 6 inches.
- Place cut pastry pieces on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until golden and puffed.
- Whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Once cooled, slice each pastry in half horizontally.
- On the bottom half, layer whipped cream and then fresh raspberries.
- Top with the other half of the pastry and dust with powdered sugar before serving.
Notes
Chill your tools for whipping cream, and keep puff pastry cold for best results.
