Ingredients

  • 1 box red velvet cake mix
  • 1 cup water
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 can (12 oz) cream cheese frosting
  • 2 cups white chocolate chips
  • 2 tablespoons vegetable oil (for melting chocolate)
  • Sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a round cake pan according to the instructions on the cake mix box.
  2. In a large mixing bowl, combine the red velvet cake mix, water, vegetable oil, and eggs. Mix until smooth using an electric mixer.
  3. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  4. Let the cake cool in the pan for 10 minutes, then transfer it to a cooling rack to cool completely.
  5. Crumble the cooled cake into fine pieces into another bowl.
  6. Add the cream cheese frosting to the crumbs and mix until fully combined.
  7. Form small balls (about 1 inch) and place them on a parchment-lined baking sheet. Refrigerate for 30 minutes.
  8. While chilling, melt the white chocolate chips with 2 tablespoons of vegetable oil in a microwave-safe bowl, heating in intervals and stirring until smooth.
  9. Dip the end of a cake pop stick into the melted chocolate and insert it into each cake ball.
  10. Dip each cake pop into the melted chocolate and let any excess drip off before placing back on the parchment paper.
  11. Sprinkle toppings while the chocolate is still wet and let them set completely at room temperature or in the refrigerator for 15-20 minutes.
