Ingredients

  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 teaspoon white vinegar
  • 1/4 cup cocoa powder
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 8 oz (1 package) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan with parchment paper or non-stick spray.
  2. In a large bowl, whisk together the melted butter and granulated sugar until smooth.
  3. Add the eggs, vanilla extract, red food coloring, and vinegar, and mix until combined.
  4. Sift in the cocoa powder, flour, and salt, and gently fold until just combined. Reserve 1/4 cup of this batter for later.
  5. In a separate bowl, beat the cream cheese with the granulated sugar until creamy. Incorporate the egg and vanilla until fluffy.
  6. Pour the red velvet batter into the baking pan and spread evenly.
  7. Dollop the cheesecake mixture on top and swirl together using a knife.
  8. Add dollops of the reserved red velvet batter and incorporate into the swirl.
  9. Bake for 25-30 minutes, until a toothpick comes out with a few moist crumbs.
