Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard loaf pan with butter or spray.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Fold in the mashed sweet potatoes and vanilla extract gently.
  6. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  7. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  8. Pour the batter into the prepared loaf pan and smooth out the top.
