Ingredients

- 2 medium beets
- 2 medium sweet potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled
- 1/2 cup Greek yogurt
- 1 tablespoon olive oil (for the dressing)
- 1 tablespoon lemon juice
- 1 clove garlic, minced
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the beets and sweet potatoes thoroughly.
- Peel and cube the sweet potatoes and beets into 1-inch pieces.
- In a large bowl, combine the cubed beets and sweet potatoes. Drizzle with 2 tablespoons of olive oil and season with salt and pepper. Toss until well coated.
- Spread the vegetables out on a parchment-lined baking sheet.
- Roast for 30-40 minutes, stirring halfway through, until tender.
- In a small bowl, mix Greek yogurt, lemon juice, minced garlic, and 1 tablespoon of olive oil until smooth; season with salt and pepper.
- Once roasted, transfer the veggies to a serving bowl. Add crumbled feta and drizzle with the yogurt dressing. Toss gently to combine and serve.
