Description

A simple yet impressive roasted chicken recipe perfect for family dinners, filled with delicious flavors and cozy aromas.


Ingredients

  • 1 whole chicken (45 lbs)
  • 1 lb baby potatoes (halved)
  • 1 lb carrots (roughly chopped)
  • 1 large onion (quartered)
  • 4 tbsp olive oil
  • 2 tbsp salt (divided)
  • 2 tsp black pepper
  • 1 tbsp Bayou City all-purpose seasoning
  • 2 sprigs rosemary
  • 4 sprigs thyme
  • 2 sprigs sage
  • ½ cup white wine (or chicken stock)
  • sticks butter (softened)
  • 4 cloves garlic (minced)
  • 1 tbsp Bayou City all-purpose seasoning (or Creole seasoning)
  • 1 tsp smoked paprika
  • 1 tsp cayenne (optional)
  • 1 tsp onion powder
  • 1 lemon (zest)
  • 1 tbsp rosemary (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season the chicken with 1 tablespoon of salt inside and out.
  3. In a small bowl, mix the softened butter, minced garlic, Bayou City seasoning, smoked paprika, cayenne (if using), onion powder, chopped rosemary, and lemon zest; add salt and pepper to taste.
  4. Pat the chicken dry and rub the garlic butter mixture all over the chicken.
  5. Stuff the chicken cavity with lemon slices, thyme, rosemary, sage, and half of the quartered onion.
  6. Toss baby potatoes, carrots, and remaining onion with olive oil, remaining salt, pepper, and seasoning in a separate bowl.
  7. Pour white wine or chicken stock into the bottom of the roasting pan and arrange the vegetables.
  8. Set the chicken over the vegetables, breast-side up.
  9. Roast for about 1 hour and 30 minutes, basting every 30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  10. Let the chicken rest for 10-15 minutes before carving and serve alongside the roasted vegetables.

Notes

Make sure to let the chicken come to room temperature before roasting for even cooking. Basting every 30 minutes keeps the chicken juicy.
