Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 pound sausage (Italian or your choice)
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: Fresh herbs (parsley or thyme) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine honey, minced garlic, olive oil, salt, and pepper to create the honey garlic sauce. Whisk until glossy.
  3. On a sheet pan, arrange sausage and sweet potato cubes. Spread evenly for even cooking.
  4. Drizzle the honey garlic sauce over the sausage and potatoes, and toss to coat evenly.
  5. Spread the ingredients in a single layer and roast for 25-30 minutes, turning halfway through.
  6. Optional: Garnish with fresh herbs before serving.

Notes

For a richer flavor, add a splash of butter at the end. For added heat, stir in red pepper flakes into the sauce.
