- 2 medium sweet potatoes, peeled and cubed
- 1 pound sausage (Italian or your choice)
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Optional: Fresh herbs (parsley or thyme) for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine honey, minced garlic, olive oil, salt, and pepper to create the honey garlic sauce. Whisk until glossy.
- On a sheet pan, arrange sausage and sweet potato cubes. Spread evenly for even cooking.
- Drizzle the honey garlic sauce over the sausage and potatoes, and toss to coat evenly.
- Spread the ingredients in a single layer and roast for 25-30 minutes, turning halfway through.
- Optional: Garnish with fresh herbs before serving.
Notes
For a richer flavor, add a splash of butter at the end. For added heat, stir in red pepper flakes into the sauce.
