- 2 pieces Sirloin Steak
- 1/4 cup Irish Whiskey (Jameson)
- 4 tablespoons Butter
- 1 pound Potatoes
- 1 cup Kale
- 1 cup Cream
- 1/2 cup Shallots
Instructions
- Marinate the Steaks: Place your sirloin steaks in a shallow dish. Pour 1/4 cup of Irish whiskey over the steaks, coating them thoroughly. Let them marinate for at least 30 minutes.
- Prepare the Potatoes: Peel and chop the potatoes into even chunks. Place them in a pot of salted water and bring it to a boil. Cook for about 15-20 minutes or until fork-tender. Drain and set aside.
- Sauté Shallots: In a large skillet over medium heat, melt 2 tablespoons of butter. Add finely chopped shallots and sauté until soft and translucent, about 3-4 minutes.
- Add Kale: Stir in the kale and cook until it wilts, about 2-3 minutes. Season with salt and pepper. Remove from the skillet and set aside.
- Cook the Steaks: In the same skillet, add the remaining 2 tablespoons of butter. Increase heat to high, remove the steaks from the marinade, and add to the skillet. Sear for 4-5 minutes on each side.
- Prepare the Cream Sauce: Remove steaks and let them rest. Return the skillet to medium heat, add the cream to the drippings, and whisk until slightly thickened, about 3-4 minutes.
- Mash the Potatoes: In a bowl, combine cooked potatoes, the sautéed kale and shallots, and a splash of cream. Mash until smooth and creamy.
- Serve: Plate colcannon, slice rested steaks, place alongside, and drizzle with whiskey cream sauce. Enjoy!
Notes
For added richness, consider stirring in cheddar cheese into the colcannon or using different cuts of steak.
