Ingredients

  • 2 cups granulated sugar
  • 4 oz unsalted butter
  • 1/3 cup melted vanilla ice cream
  • 1 cup Ghirardelli green chips
  • Optional: pinch of salt

Instructions

  1. In a medium saucepan over medium heat, melt the butter, stirring until completely liquid and bubbling softly.
  2. Stir in the granulated sugar until well combined and smooth.
  3. Remove from heat and mix in the melted vanilla ice cream until silky and smooth.
  4. Fold in the Ghirardelli green chips evenly.
  5. Pour the mixture into a greased 8×8 inch pan and spread evenly.
  6. Optional: sprinkle shamrock sprinkles on top before it sets.
  7. Allow to cool and set completely before cutting into squares.
