Crispy, flavorful sheet pan chicken pitas filled with creamy herby ranch slaw for a comforting dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tbsp brown sugar
  • 1½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cayenne pepper
  • ½ tsp kosher salt
  • 1 tbsp olive oil
  • ½ lemon, sliced
  • ½ cup plain yogurt (or non-dairy alternative)
  • ¼ cup fresh dill, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 2 tbsp fresh chives, minced
  • Juice from ½ lemon
  • 2 tbsp olive oil (additional for ranch)
  • Kosher salt to taste
  • ½ small head green cabbage, shredded
  • 23 pitas
  • 1 ripe avocado, cubed

Instructions

  1. Preheat your oven to 425°F.
  2. In a large bowl, combine the cut chicken pieces with brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, kosher salt, and olive oil. Toss to coat.
  3. Add the lemon slices to the bowl and toss again.
  4. Spread the chicken and lemon on a sheet pan in a single layer and roast for 15 minutes.
  5. After 15 minutes, toss the chicken, return to the oven, and continue roasting for an additional 4-7 minutes until golden and cooked through.
  6. While the chicken is roasting, prepare the herby ranch slaw by whisking together the yogurt, dill, parsley, chives, lemon juice, and kosher salt until creamy.
  7. Fold in the shredded cabbage and let it rest for 10-15 minutes.
  8. If desired, warm the pitas briefly in a skillet or microwave.
  9. Fill each pita with the herby slaw, topped with roasted chicken and cubed avocado.
  10. Serve warm, garnished with extra herbs or lemon if desired.

Notes

For added flavor, marinate the chicken a few hours prior. Feel free to customize veggies in the slaw.
