Instructions
- Place cubed beef chuck in the slow cooker. Add chopped onion, minced garlic, grated ginger, curry powder, salt, and pepper.
- Pour in the coconut milk and beef broth, then add the chopped vegetables.
- Gently stir all ingredients to combine.
- Cover the slow cooker and set it to cook on low for 6 to 8 hours.
- Once the beef is cooked and tender, serve hot, garnished with fresh cilantro.
