- 2 lbs beef chuck, cut into cubes
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Prepare your ingredients: chop the onion, mince the garlic and ginger, and cut the beef into cubes.
- In the slow cooker, combine the beef, coconut milk, chopped onion, minced garlic, minced ginger, curry powder, soy sauce, and diced tomatoes.
- Stir until well incorporated and season with salt and pepper to taste.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours until the beef is tender.
- Once cooked, stir gently and garnish with fresh cilantro before serving.
Notes
For additional flavor, add vegetables or adjust spice levels to your liking. This dish pairs beautifully with rice or naan.
