- 1 lb chicken breast
- 6 cups chicken broth
- 2 cups egg noodles
- 1 onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Instructions
- Place the chicken breast at the bottom of the slow cooker.
- Pour in the chicken broth, then add the chopped onion, sliced carrots, sliced celery, and minced garlic.
- Sprinkle in the dried thyme and parsley, then season with salt and pepper. Stir gently to combine.
- Cover the slow cooker and cook on low for 360-420 minutes (6-7 hours) or on high for 180-240 minutes (3-4 hours).
- About 30 minutes before serving, add the egg noodles.
- Once cooked, remove the chicken breast, shred it, and stir it back into the soup.
- Serve hot, garnished with fresh parsley if desired.
Notes
Prep your vegetables the night before for easier cooking, and consider omitting noodles before freezing leftovers to keep their texture.
