Ingredients

  • 6 cups chicken broth
  • 2 cups egg noodles
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Place the chicken breast at the bottom of the slow cooker.
  2. Pour in the chicken broth, then add the chopped onion, sliced carrots, sliced celery, and minced garlic.
  3. Sprinkle in the dried thyme and parsley, then season with salt and pepper. Stir gently to combine.
  4. Cover the slow cooker and cook on low for 360-420 minutes (6-7 hours) or on high for 180-240 minutes (3-4 hours).
  5. About 30 minutes before serving, add the egg noodles.
  6. Once cooked, remove the chicken breast, shred it, and stir it back into the soup.
  7. Serve hot, garnished with fresh parsley if desired.

Prep your vegetables the night before for easier cooking, and consider omitting noodles before freezing leftovers to keep their texture.
