  • 4 cups chicken broth
  • 1 cup rice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Place the chicken breasts in the slow cooker, laying them flat.
  2. In a mixing bowl, combine the lemon juice, olive oil, dried herbs, salt, and pepper. Whisk until well combined, then pour it over the chicken.
  3. Carefully pour the chicken broth around the chicken in the slow cooker.
  4. Set the slow cooker to low and cover. Cook for 6-7 hours, or on high for 3-4 hours until the chicken is tender and fully cooked.
  5. During the last 30 minutes of cooking, add the rice and stir gently to ensure it is submerged in the broth.
  6. Once cooking is complete, fluff the rice gently with a fork and serve the chicken and rice together, garnished with fresh parsley if desired.
