  • 1 1/2 tablespoons ground ginger
  • 1 1/2 teaspoons cinnamon

  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened (1 1/2 sticks)
  • 3/4 cup light brown sugar (packed)
  • 1/2 cup molasses
  • 1 large egg (room temperature)
  • 2 1/2 cups powdered sugar
  • 4 tablespoons warm water
  • 2 tablespoons meringue powder
  • 1/2 teaspoon cream of tartar
  • Sprinkles of your choice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, cloves, and nutmeg. Set aside.
  3. Cream the softened butter and light brown sugar in a large mixing bowl using an electric mixer for 2-3 minutes until fluffy.
  4. Add molasses and egg to the mixture, mixing until well combined.
  5. Gradually stir in the dry ingredients until a soft dough forms.
  6. Dust a clean work surface with flour and roll out half the dough to about 1/4 inch thickness.
  7. Cut out shapes with cookie cutters and place them on the baking sheet.
  8. Repeat with the remaining dough.
  9. Bake for 8-10 minutes, until the edges are firm and the centers are slightly soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  11. For icing, mix powdered sugar, warm water, meringue powder, and cream of tartar until smooth.
  12. Decorate cookies with icing and sprinkles as desired.
