Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Pour the batter evenly into prepared cake pans and bake for 25 to 30 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- Frost the cooled cakes generously with cream cheese frosting before serving.
