Ingredients
For the Garlic Butter Steak Bites:
- 1½ lbs sirloin or ribeye steak, cut into bite-sized cubes
- 2 tbsp olive oil
- 3 tbsp butter
- 5 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt & pepper to taste
For the Spicy Ranch Alfredo Pasta:
- 12 oz twisted pasta (rotini or fusilli)
- 1 tbsp butter
- 1¼ cups heavy cream
- 4 oz cream cheese, softened
- 1 packet (1 oz) ranch seasoning mix
- ½ tsp red pepper flakes (adjust to taste)
- ¾ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and black pepper to taste
- ½ cup reserved pasta water (if needed)
- Fresh parsley, for garnish
Instructions
Step 1: Boil the Pasta
Bring a large pot of salted water to a boil. Add the twisted pasta and cook according to package directions until al dente. Reserve about ½ cup of pasta water, then drain the pasta and set it aside.
Step 2: Sear the Steak Bites
While the pasta cooks, season the steak cubes with garlic powder, onion powder, smoked paprika, salt, and pepper. In a large skillet over medium-high heat, heat the olive oil. Add the steak bites in a single layer and sear for 2–3 minutes per side until golden brown and cooked through. Remove the steak from the skillet and set aside.
Step 3: Make Garlic Butter Sauce
In the same skillet, melt 3 tablespoons of butter. Add the minced garlic and sauté for 1–2 minutes until fragrant. Return the steak bites to the skillet and toss them in the garlic butter. Turn off the heat and let them sit while you make the sauce.
Step 4: Prepare Spicy Ranch Alfredo Sauce
In a separate saucepan, melt 1 tablespoon of butter over medium heat. Add the softened cream cheese and stir until smooth. Slowly whisk in the heavy cream and let it heat through. Add in the ranch seasoning mix and red pepper flakes, stirring to combine. Once simmering, add the Parmesan and mozzarella, stirring until the sauce is creamy and fully melted. If it becomes too thick, stir in some of the reserved pasta water until it reaches the perfect consistency.
Step 5: Assemble Everything
Add the cooked pasta to the spicy Alfredo sauce and toss gently to coat. Transfer the garlic butter steak bites into the pasta pan and stir everything together. Taste and adjust seasoning as needed. Garnish with chopped parsley before serving.
