Ingredients

  • 1 lb sirloin steak
  • 1 cup queso cheese (Monterey Jack or cheddar)
  • 1 cup long-grain white rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 bell pepper, diced (any color)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing the onion and bell pepper, and mincing the garlic. Pat the sirloin dry and season both sides with salt and pepper.
  2. Heat the skillet over medium-high and add olive oil. When hot, add the steak and sear for about 4 to 5 minutes on each side until browned.
  3. Remove the steak and let it rest. In the same skillet, sauté the onion and bell pepper for 3 to 4 minutes until fragrant.
  4. Add the rice, stirring to coat it with the oil and vegetable flavors, then add spices and stir for 1-2 minutes.
  5. Gradually add the queso cheese, stirring until melted and creamy. If thick, add a splash of broth to loosen.
  6. Slice the rested steak against the grain and fold it into the cheesy rice. Serve hot with desired garnishes.

For a creamier texture, add a splash of broth. Feel free to customize with different cheeses or add-ins.
