Description

A classic British dessert that combines tender date-infused sponge with a rich toffee sauce, creating a comforting and indulgent treat.


Ingredients

  • 200g Medjool dates, chopped
  • 250ml water
  • 1 tsp baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 180°C (350°F) and grease your baking dish.
  2. In a saucepan, combine the chopped dates, water, and baking soda and bring to a gentle boil.
  3. Allow the mixture to simmer for about 5 minutes until the dates are soft, then mash them into a thick paste.
  4. In a large mixing bowl, beat the softened butter and brown sugar until creamy and light.
  5. Add the eggs one at a time, beating well after each addition.
  6. Add the mashed date mixture, flour, baking powder, vanilla extract, and salt and mix until just combined.
  7. Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a skewer inserted in the center comes out clean.
  8. Serve warm with toffee sauce and ice cream or whipped cream.

Notes

Soft, fresh Medjool dates work best for this recipe. Do not overmix the batter to avoid a dense pudding.
