- 200g Medjool dates, chopped
- 250ml water
- 1 tsp baking soda
- 100g unsalted butter, softened
- 150g brown sugar
- 2 large eggs
- 150g all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 180°C (350°F) and grease your baking dish.
- In a saucepan, combine the chopped dates, water, and baking soda and bring to a gentle boil.
- Allow the mixture to simmer for about 5 minutes until the dates are soft, then mash them into a thick paste.
- In a large mixing bowl, beat the softened butter and brown sugar until creamy and light.
- Add the eggs one at a time, beating well after each addition.
- Add the mashed date mixture, flour, baking powder, vanilla extract, and salt and mix until just combined.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a skewer inserted in the center comes out clean.
- Serve warm with toffee sauce and ice cream or whipped cream.
Notes
Soft, fresh Medjool dates work best for this recipe. Do not overmix the batter to avoid a dense pudding.
