Ingredients

  • 3 pounds chuck beef (cut into 1 inch cubes)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon browning sauce (optional, for color)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 2 stalks celery (chopped)
  • 1/4 cup finely chopped yellow onion
  • 8 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons roast beef base paste (like Better than Bouillon)
  • 4 cups beef stock
  • 2/3 cup red cooking wine (merlot or any dark red wine)
  • A bunch of fresh herbs (rosemary, thyme, bay leaf, about 2 sprigs each)
  • 4 large carrots (roughly chopped)
  • 3 medium Yukon gold potatoes (cut into cubes)

Instructions

  1. Season the beef cubes with flour, Worcestershire sauce, browning sauce, garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Toss until each cube is lightly coated.
  2. Heat vegetable oil in a Dutch oven over medium-high heat and sear beef until golden brown, about 2-3 minutes, working in batches.
  3. Remove beef and set aside, leaving browned bits in the pot.
  4. Add chopped celery, onion, and minced garlic to the pot; sauté until fragrant, about 3-5 minutes.
  5. Stir in tomato paste and beef base; simmer for 2-3 minutes.
  6. Add beef stock and red wine, scraping bits from the pot. Bring to a gentle simmer.
  7. Return beef to pot, cover, and simmer on medium-low for about 2 hours.
  8. Add potatoes and carrots; cover and cook for an additional 30-45 minutes until vegetables are tender.
  9. Serve hot with crusty bread or rice, garnished with fresh herbs if desired.

Notes

Brown the beef in batches and use the fond for flavor. Adjust seasoning near the end.
