Description

Delightful strawberry sugar cookies that combine the sweetness of fresh strawberries with a soft, buttery dough, perfect for any occasion.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, diced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium-sized bowl, combine the flour, baking soda, and baking powder.
  3. In another bowl, cream the softened butter and sugar together using an electric mixer until light and fluffy (about 2 to 3 minutes).
  4. Add in the egg, vanilla extract, and salt, mixing until well combined.
  5. Gradually add the dry flour mixture to the wet ingredients and mix until just incorporated.
  6. Gently fold in the diced strawberries.
  7. Drop spoonfuls of dough onto ungreased baking sheets.
  8. Bake for 8 to 10 minutes, or until the edges are lightly golden.
  9. Let them cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

For a variety, try adding lemon zest or white chocolate chips. You can also make them gluten-free with a 1:1 baking flour.
