- 2 cups cooked chicken, shredded
- 1 can corn, drained
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can green chilies, diced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips for topping
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, drained corn, sour cream, shredded cheese, diced green chilies, chili powder, cumin, salt, and pepper. Mix until evenly coated.
- Transfer the mixture into a greased casserole dish, spreading it evenly.
- Top with crushed tortilla chips, and add extra cheese if desired.
- Bake for 25–30 minutes or until bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
For added texture, bake until chips are golden brown. Can substitute chicken with black beans for a vegetarian version.
