Ingredients

  • 1 can corn, drained
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can green chilies, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips for topping
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, drained corn, sour cream, shredded cheese, diced green chilies, chili powder, cumin, salt, and pepper. Mix until evenly coated.
  3. Transfer the mixture into a greased casserole dish, spreading it evenly.
  4. Top with crushed tortilla chips, and add extra cheese if desired.
  5. Bake for 25–30 minutes or until bubbly and golden.
  6. Garnish with fresh cilantro before serving.

Notes
