Ingredients

  • 1 1/2 lb lean ground beef
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 small garlic cloves, minced
  • 1 tsp Italian seasoning (or Cajun seasoning)
  • 2 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 14 oz canned diced tomatoes
  • 1 cup long-grain white rice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the ground beef, onion, and garlic; cook until the beef is browned, about 5-7 minutes.
  4. Stir in the diced bell peppers, Italian seasoning, Worcestershire sauce, salt, and black pepper; cook for 5 minutes.
  5. Add the canned tomatoes and rice; mix well.
  6. Transfer the mixture to a greased casserole dish and spread evenly.
  7. Cover and bake for 30 minutes.
  8. Uncover and bake for an additional 15 minutes or until the rice is cooked and liquid is absorbed.
  9. Serve hot and enjoy!

Notes

For added richness, consider swapping some of the tomato liquid for broth. The casserole is forgiving and can be prepared ahead of time.
