Description

Ingredients

  • 1 1/2 cups (180g) all-purpose flour, spoon and leveled
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick / 115g) unsalted butter, melted and cooled slightly
  • 1/4 cup (60mL) vegetable oil
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (360g) mashed ripe bananas (about 34 medium-sized bananas)
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, combine the melted butter, vegetable oil, and granulated sugar. Whisk until blended and frothy.
  4. Add the eggs one at a time, whisking until smooth.
  5. Stir in the vanilla extract.
  6. Fold in the mashed bananas with the wet ingredients.
  7. Pour the dry ingredients into the wet mixture and mix gently until just combined.
  8. Fold in the chocolate chips.
  9. Pour the batter into a prepared 9×5 inch loaf pan.
  10. Bake for 50-60 minutes, or until a skewer inserted comes out with a few moist crumbs.
  11. Allow to cool before slicing and serving.
