  • 1 lb salmon, fresh or frozen, skinless
  • 1 cup mayonnaise, preferably Japanese
  • 2 tablespoons Sriracha sauce, adjust based on spice preference
  • 1/2 cup cream cheese, softened
  • Soy sauce, for drizzling
  • 1/4 cup green onions, chopped for garnish
  • 10 sheets nori, cut into manageable pieces for serving
  • 1 tablespoon sesame seeds, toasted, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the sushi rice according to instructions, then season with sushi vinegar.
  3. Marinate the salmon chunks with mayonnaise, soy sauce, and Sriracha for at least 30 minutes.
  4. Spread the cooked sushi rice evenly across the bottom of a greased baking dish.
  5. Layer the marinated salmon over the rice, optionally adding a layer of cream cheese in between.
  6. Cover with aluminum foil and bake for 15-20 minutes, then remove the foil and broil for an additional 2-3 minutes until golden and bubbly.
  7. Let the bake rest for a few minutes before serving with nori pieces for scooping.
