- 3 cups sushi rice, rinsed and cooked
- 1 lb salmon, fresh or frozen, skinless
- 1 cup mayonnaise, preferably Japanese
- 2 tablespoons Sriracha sauce, adjust based on spice preference
- 1/2 cup cream cheese, softened
- Soy sauce, for drizzling
- 1/4 cup green onions, chopped for garnish
- 10 sheets nori, cut into manageable pieces for serving
- 1 tablespoon sesame seeds, toasted, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the sushi rice according to instructions, then season with sushi vinegar.
- Marinate the salmon chunks with mayonnaise, soy sauce, and Sriracha for at least 30 minutes.
- Spread the cooked sushi rice evenly across the bottom of a greased baking dish.
- Layer the marinated salmon over the rice, optionally adding a layer of cream cheese in between.
- Cover with aluminum foil and bake for 15-20 minutes, then remove the foil and broil for an additional 2-3 minutes until golden and bubbly.
- Let the bake rest for a few minutes before serving with nori pieces for scooping.
