- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, rinsed and drained
- 8 corn tortillas
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Pepper to taste
- Fresh cilantro, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes in a bowl with olive oil, cumin, chili powder, salt, and pepper.
- Spread on a baking sheet in a single layer and roast for 20-25 minutes until tender and slightly crispy.
- In a pan, heat olive oil and sauté diced onion and minced garlic until softened.
- Add black beans and heat through.
- Warm corn tortillas in another pan until pliable.
- Assemble tacos with roasted sweet potato and black bean mixture, garnish with cilantro, and serve warm.
