Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, rinsed and drained
  • 8 corn tortillas
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes in a bowl with olive oil, cumin, chili powder, salt, and pepper.
  3. Spread on a baking sheet in a single layer and roast for 20-25 minutes until tender and slightly crispy.
  4. In a pan, heat olive oil and sauté diced onion and minced garlic until softened.
  5. Add black beans and heat through.
  6. Warm corn tortillas in another pan until pliable.
  7. Assemble tacos with roasted sweet potato and black bean mixture, garnish with cilantro, and serve warm.
