- 1 cup quinoa, cooked

- 1 cup corn, cooked

Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced sweet potatoes with olive oil, salt, and pepper in a large mixing bowl.
- Spread the sweet potatoes onto a baking sheet in a single layer and roast for about 25 minutes, flipping halfway through.
- In a large bowl, combine the cooked quinoa, rinsed black beans, and cooked corn. Stir gently to mix.
- Once the sweet potatoes are done, mix them into the bowl with quinoa, corn, and black beans.
- Top the mixture with slices of avocado.
- Drizzle your favorite dressing over the top.
- Garnish with fresh herbs before serving.
