Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper in a large mixing bowl.
  3. Spread the sweet potatoes onto a baking sheet in a single layer and roast for about 25 minutes, flipping halfway through.
  4. In a large bowl, combine the cooked quinoa, rinsed black beans, and cooked corn. Stir gently to mix.
