Ingredients

  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 cup mini marshmallows
  • Salt, to taste
  • A dash of black pepper (optional)
  • 1 tablespoon butter (optional for topping)
  • Chopped pecans (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) with the rack in the middle position.
  2. In a large bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, vanilla extract, and cinnamon. Mix until smooth.
  3. Transfer the mixture to a greased baking dish, smoothing the surface with a rubber spatula.
  4. Sprinkle mini marshmallows generously on top.
  5. Bake in the preheated oven for 25-30 minutes until the marshmallows are golden brown.
  6. Remove from the oven and let cool for a few minutes before serving.

Notes

For best results, use warm sweet potatoes for mashing. Adjust sweetness and salt before baking. Add marshmallows just before baking to maintain texture.
