Ingredients

  • 3 cups mashed sweet potatoes
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1 cup chopped pecans
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine mashed sweet potatoes, sugar, milk, melted butter, eggs, vanilla extract, salt, and ground cinnamon. Whisk until smooth and creamy.
  3. Pour the sweet potato mixture into a greased 9×13 inch baking dish and spread it evenly.
  4. In a separate bowl, mix together mini marshmallows and chopped pecans.
  5. Sprinkle the marshmallow and pecan mixture evenly over the sweet potato layer.
  6. Bake in the preheated oven for 25-30 minutes, until marshmallows are golden brown.
  7. Allow to cool slightly before serving.

Notes

You can prepare the sweet potato mixture a day in advance and store it in the refrigerator. For added flavor, toast the pecans before mixing.
