- 4 cups sweet potatoes, cooked and mashed
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 cup mini marshmallows
- Salt, to taste
- 1 tablespoon orange zest (optional)
- A splash of heavy cream (optional)
Instructions
- Preheat your oven to 350°F (175°C) with the rack in the middle position.
- In a large bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, vanilla extract, and cinnamon. Mix until smooth and creamy.
- Transfer the mixture to a greased baking dish and spread evenly, creating a shallow well in the center.
- Sprinkle mini marshmallows generously over the top.
- Bake in the preheated oven for 25-30 minutes until the marshmallows are golden brown.
- Remove from oven and let cool for a few minutes before serving.
Notes
For extra richness, dot the top with more butter before adding marshmallows. Consider adding a handful of chopped pecans for crunch.
