Description

A comforting and creamy Sweet Potato & Cranberry Gratin, perfect for cozy dinners or festive gatherings.


Ingredients

  • 2 pounds sweet potatoes, peeled and thinly sliced
  • 1 cup cranberries (fresh or frozen)
  • 1 cup Gruyère cheese, shredded
  • 1 cup heavy cream
  • 1 cup breadcrumbs
  • 2 tablespoons butter, melted
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with butter or cooking spray.
  3. Layer half of the sweet potato slices at the bottom of the greased dish and sprinkle with half of the cranberries.
  4. Add half of the shredded Gruyère cheese and season with salt and pepper.
  5. Repeat the layering with the remaining sweet potatoes, cranberries, and Gruyère cheese.
  6. In a mixing bowl, whisk together the heavy cream and thyme, then pour over the layered gratin.
  7. Combine breadcrumbs with melted butter and sprinkle over the top.
  8. Cover with aluminum foil and bake for 40 minutes.
  9. Remove foil and bake for an additional 15 to 20 minutes until bubbly and golden brown.
  10. Let cool for a few minutes before serving.

Notes

For a vegan option, substitute heavy cream with coconut milk and use vegan cheese alternatives.
