A comforting and creamy Sweet Potato & Cranberry Gratin, perfect for cozy dinners or festive gatherings.
Ingredients

- 2 pounds sweet potatoes, peeled and thinly sliced
- 1 cup cranberries (fresh or frozen)
- 1 cup Gruyère cheese, shredded
- 1 cup heavy cream
- 1 cup breadcrumbs
- 2 tablespoons butter, melted
- Salt and pepper to taste
- 1 teaspoon thyme (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a baking dish with butter or cooking spray.
- Layer half of the sweet potato slices at the bottom of the greased dish and sprinkle with half of the cranberries.
- Add half of the shredded Gruyère cheese and season with salt and pepper.
- Repeat the layering with the remaining sweet potatoes, cranberries, and Gruyère cheese.
- In a mixing bowl, whisk together the heavy cream and thyme, then pour over the layered gratin.
- Combine breadcrumbs with melted butter and sprinkle over the top.
- Cover with aluminum foil and bake for 40 minutes.
- Remove foil and bake for an additional 15 to 20 minutes until bubbly and golden brown.
- Let cool for a few minutes before serving.
Notes
For a vegan option, substitute heavy cream with coconut milk and use vegan cheese alternatives.
