Instructions
- Prepare the Sweet Potatoes: Prick the sweet potatoes with a fork and cook in the microwave for 7 to 10 minutes until tender, or roast in the oven until fork-tender. Let cool.
- Mash the Sweet Potatoes: Scoop the flesh into a mixing bowl and mash until smooth.
- Make the Dough: Gradually mix in flour and salt with the mashed sweet potatoes until a dough forms. Add flour until not too sticky.
- Knead the Dough: Transfer to a floured surface and gently knead until smooth.
- Shape the Gnocchi: Roll dough into ropes, cut into small pieces, and use a fork to create ridges if desired.
- Cook the Gnocchi: Boil salted water and drop gnocchi in batches. When they float, let them cook for an additional 2-3 minutes before removing.
- Serve: Toss cooked gnocchi with olive oil or your favorite sauce and enjoy.
Notes
Avoid over-kneading the dough to keep gnocchi tender and consider testing a few pieces before cooking the entire batch.
