Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, drizzle olive oil over the sweet potatoes, sprinkle with smoked paprika, salt, and pepper, and toss to coat.
- Spread sweet potatoes on a baking sheet in a single layer.
- Roast for 15 minutes, then flip and continue roasting for another 10-15 minutes until tender and golden.
- Meanwhile, brown ground beef in a skillet over medium heat until cooked; add taco seasoning and water, stirring for 2-3 minutes.
- Assemble the bowls: divide roasted sweet potatoes, top with beef, pico de gallo, guacamole, and sour cream.
- Garnish with cilantro and lime wedges if desired.
