  • ½ cup pico de gallo
  • ¼ cup guacamole
  • 2 tbsp sour cream (or dairy-free alternative)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, drizzle olive oil over the sweet potatoes, sprinkle with smoked paprika, salt, and pepper, and toss to coat.
  3. Spread sweet potatoes on a baking sheet in a single layer.
  4. Roast for 15 minutes, then flip and continue roasting for another 10-15 minutes until tender and golden.
  5. Meanwhile, brown ground beef in a skillet over medium heat until cooked; add taco seasoning and water, stirring for 2-3 minutes.
  6. Assemble the bowls: divide roasted sweet potatoes, top with beef, pico de gallo, guacamole, and sour cream.
