Ingredients

- 1 large sweet potato, peeled and cubed
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- ½ lb ground beef (or turkey/lentils)
- 1 tbsp taco seasoning
- ½ cup pico de gallo
- ¼ cup guacamole
- 2 tbsp sour cream (or dairy-free alternative)
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, drizzle olive oil over the sweet potatoes, sprinkle with smoked paprika, salt, and pepper, and toss to coat.
- Spread sweet potatoes on a baking sheet in a single layer.
- Roast for 15 minutes, then flip and continue roasting for another 10-15 minutes until tender and golden.
- While roasting, brown the ground beef in a skillet over medium heat until cooked through. Add taco seasoning and 2 tbsp of water, stir, and let simmer for 2-3 minutes.
- Assemble the bowls: divide roasted sweet potatoes, top with seasoned beef, pico de gallo, guacamole, and a dollop of sour cream.
- Garnish with cilantro and lime wedges if desired.
Notes
For added heat, include jalapeños or cayenne. Store leftovers separately for best texture.
